While combat plays a role in Northgard, the decisions its other systems encourage are the source of some of its most thrilling tensions. While Stronghold has fire that can devastate your army in seconds, AOE has priests and way more powerful siege weaponry that can do just the same - mass splatter and conversion (also rare mid-convert/insta-death by a catapult lol silly AI). The Wolf is similar in Stronghold - sometimes much harder. Often decent but occasionally harder and famously insane on a few well known levels like Raid on Babylon. Played a bunch of the AOE 1: DE and AI can still vary a lot on some levels. Stronghold's AI inevitably has to focus more on the economic/defense aspect. I think AOE is a bit more aggressive for sure.
Be the first to point the thorn in their direction, not the other way around. BOTH however benefit from early strategic pressure on the enemy - don't get too comfortable and ignore the AI. Stronghold is much more economic/defense focused, AOE is much more offense focused. Check out GamerZakh, he does yearly lists of new games released in niche genres, including strategy/base-building. Sadly, medieval RTS is a niche genre (a niche of a niche genre to be more precise.), and I can't think of any other recent games. Maybe also keep an eye out for The Settlers series, which will have a new game in 2020. It has only little focus on combat, though. If you enjoy the economy management of the Stronghold series, you might wanna check out Anno 1404.

Age of Empires 2: HD is the latest available one of the series in a medieval setting. Graphically, it's also less realistic, since the scale is all over the place (ships are super small compared to units, for example).
Units don't have morale or anything like that, and they also do not need upkeep in any way. The Age of Empires series is generally less realistic than Stronghold, because it follows more the traditional RTS style (build base -> build units -> defeat enemy).
